Easy Sauteed Carrots With Parsley

Yield: 2-3 Servings
Ingredents:
1 lb of carrots, cut into 1/4 inch slices
1 small onion, finely chopped
1 tbsp olive oil or coconut oil
1 tsp salt
1/4 tsp pepper
1 tbsp chopped parsley
Directions:
Simply peel the carrots and cut them into slices, approximately 1/4-inch wide. Set carrots aside. Place the chopped up onion into a saute pan with 1 tablespoon olive or coconut oil. Saute the onion until translucent. Add the carrots to the onions. Saute the carrots in the oil for a 1 minute or so. Poor 1/4 cup of water on top of the carrot-onion mix. Add salt, pepper and any other seasonings and bring to a boil. Cover the pan and cook the carrots over medium-low heat for 6-8 minutes or until the carrots are just cooked through and the water evaporates. Take the pan off the heat and mix in the parsley. Serve immediately and enjoy!
