Beet Salad With Goat Cheese

Ingredients:

3 large beets, peeled and cube

4 ounces of salad greens of your choice

4 ounces of crumbled goat cheese

Dressing Ingredients:

Juice of 1 orange

1/4 cup balsamic vinager

1/4 cup extra virgin olive oil

1/2 teaspoon salt

Directions:

Place the cubed beets in a steamer basket over boiling water with the lid on. Steam the beets until tender, about 12 to 15 minutes. When finished, place in the refrigerator to cool.

Rinse the salad greens, dry in a spinner, and combine in a bowl. Top with cooled beets and crumbled goat cheese.

Make a simple and delicious dressing by combining the juice of 1 orange, balsamic vinegar, olive oil, and salt in a small bowl and whisk. Drizzle over the salad just before serving. Optional: add some walnuts and parmesan cheese.
